Elderflower Cordial

You will need:

4lb granulated sugar

2 pints cold water

20 elderflower heads

2 3/4oz citric acid

Zest of 2 lemons

Step 1

Put the sugar in a saucepan with the water and simmer until the sugar is dissolved.

Step 2

Put the Elderflower heads in another big pot with a lid, pour over the sugar water, stir in the citric acid, the zest of lemons then slice the remaining lemons up and add.

Step 3

Cover and leave to infuse for 24 hours then strain through a muslin cloth into bottles.

Final

You have now a concentrated Elderflower cordial which can be mixed with sparkling or still water or, why not add a splash of Prosecco.
